Homemade Breakfast Bars

It seems like now a days that there isn’t much time for the usual bacon and eggs routine in  the morning or we get so busy in the middle of the day that we skip lunch. I like to usually carry around those Luna or Pro Bars  so I stay energized. They can get kind of expensive though so I decided to try to find an alternative. What’s great is you can basically throw whatever you’d like in them. I am a fan of using whatever I tend to have on hand to save money and time so this recipe is based off of that.

Breakfast Bars

  • 1 egg
  • 1 banana
  • 1/2 tsp. salt
  • 3/4 cup butter
  • 1 cup brown sugar
  • 1 cup of yogurt ( I use Stonyfield Organic Banilla and Vanilla)
  • 1 cup of craisins
  • 3/4 cup of pumpkin seed ( I had a 1/4 pumpkin seed and then the rest was a pumpkin seed granola mixture)
  • 4 cups of quick cooking rolled oats
  • 1/4 cup flax seed (optional)
  • 2 tbsp. cinnamon (optional)
  • 1 tbsp. coconut oil (optional)

Pre-heat oven to 350 degrees. Prep your pan. I used a Pyrex casserole dish so I would have a lid later to store the bars.

Start out by mixing the butter and brown sugar together. Then slowly add each of the additional ingredients. Scoop out onto your pan flat and bake for 45 minutes. Always remember to let cool before eating.

Super easy right? Just remember to make these the night before or else you will be super angry and hungry when you have nothing to eat. :)
